Chestnut trees, which begin to bloom in the first months of summer, between June and July, are a delicious food source for worker bees. Worker bees enter an intense working period when flowers begin to bloom. While honey bees feed themselves with the pollen, nectar and secretions they collect, they also provide pollination. Chestnut honey has different physical properties than other types of honey and can be distinguished by eye. We can briefly talk about its general physical characteristics as follows. It has a distinct aroma that combines sweet, bitter and astringent tastes, and when eaten, the chestnut taste is felt intensely. Chestnut honey is dark brown in color and has a dense consistency. It has a high viscosity value because it is a heavy fluid honey with a dense consistency. Its pH value is higher than flower honey. It crystallizes later than other honeys. Since the fructose rate is higher than the glucose rate, crystallization is slower. The granules formed as a result of crystallization have a fine structure and can be easily restored using the bain-marie method. It contains twice as much iron as flower honey.
