Organic Pine Honey (Strained Pine Honey)
Pine honey is one of the most well-known and preferred honey types among secretory honeys.
Pine honey, which we are used to seeing as filtered honey, is widely produced in Mugla and the coastal regions of the Mediterranean. It is obtained from the secretion of the insect called basra, which lives in Mugla red pine trees, therefore it is classified as secretion honey. Since pine honey is separated from its honeycombs, it is among the first honeys that come to mind when filtered honey is mentioned. In our country, pine honey production is mostly done in Mugla, so it is also known as the local honey of the region. Other known names of pine honey are Mugla honey or Mugla pine honey. Production usually starts in August, the last month of summer, and continues until the end of April.
How is Pine Honey Formed?
The Basra beetle sucks the sap of the pine tree and releases a secretion. The food chain is formed through a cycle that takes place in ecological balance and harmony. This secretion, which is very rich in protein, minerals and enzymes, is then taken by honey bees and carried to the hive. The secretions stored in the honeycomb cells both meet the nutritional needs of the bees and turn into delicious honey. Pine honey becomes filtered honey by being filtered through physical methods. Properties of Pine Honey
Pine honey has different physical and chemical properties in terms of color, smell and consistency compared to other types of honey.
Compared to flower honey, pine honey is darker in color and generally looks dark brown.
The scent of pine honey consists of pine resin and woody scents.
The pH value of pine honey is lower than other honeys and is slightly acidic.
It crystallizes later than other flower honeys, or it may remain for a long time without crystallizing at all.
