Tarhana Chips, Roasted, Kahraman Maras, 150g – 5.30oz
Believed to have been brought to Anatolia from Central Asia by nomadic Turks, tarhana is prepared in Kahramanmaraş using the local method. The tradition of neighboring women coming together in the early hours of the morning and laying tarhana in a cooperative manner is gradually disappearing from the cultural fabric of the city.
In the production of tarhana chips, wheat is first pounded in a stone mill, the husk is roasted and turned into “yarma” or “tattoo”. The pounded wheat is then washed and cooked. Village yogurt is added to the cooked pounded wheat and flavored with mountain thyme. The mixture is fermented by resting overnight and then laid out on exhibitions like thin phyllo sheets, dried in the sun, then baked in the oven and ready for consumption.
This snack product, which contains intense yogurt and thyme, can be consumed alone or with other types of nuts, as in the region.
